Grilled Filet with Blue Cheese Mornay and Blue Chocolate Drizzle

One of the greatest rewards in this business of service, dream merchants, thespians and artists is the pride and joy of reputation. During the first Friday event, the Nevada Health Department who are fair and honest foodies goes to all vendors. The Health Department Inspector saw the PO MI Thai chicken salad was a favorite and asked me to save him one for lunch. He enjoyed it so much that he took one home from his wife and later called if I could make it again for him and his wife at my restaurant. I happily agreed. What happened at the time was we were working on chocolate garnishes for some of the desserts and I was also training a young cook to make a Maytag blue cheese Mornay.

Well, chocolate got in my Mornay or I got Mornay in my chocolate. But it was delicious. The chocolate balanced. The sharp blue cheese with the smooth chocolate finish and the juice of the beef. The smokiness of the filet, the excellent sharpness of the Blue Cheese, and the colorful drizzle of blue chocolate brought a sigh and smile of satisfaction. That weekend after that meal, I sold over 20 of those specials to health Department workers and management. The expression and adulation that my staff and I received amplified. By the lack of politics and honesty of their words was the greatest reward we could receive. This creation is now here exclusively for you to enjoy in your homes as part of your Christmas dinner.

GRILLED FILET WITH BLUE CHEESE MORNAY AND BLUE CHOCOLATE DRIZZLE

(Serves 2)

INGREDIENTS

  • 2 Tbsp Butter
  • 3 Cloves
  • 1 Onion( Left whole)
  • ¼ cup Flour
  •  1 cup Milk
  • 7 oz Filet( Montreal steak seasoning) Grilled to desired temperature.  (135 degrees for medium rare)
  • 4 Oz

INSTRUCTIONS

  1. Melt butter in a saucepan.  Stick cloves in onion, set aside.
  2. Whisk in flour into butter. Continue to cook for one minute.
  3. Slowly incorporate milk whisking to break up any lumps. Add onion.
  4. Before serving, remove onion and whisk in blue cheese. Center filet on plate and cover the steak with Mornay.  Microwave chocolate for 30 seconds, stir and drizzle over sauce when plating.

Note: I get my chocolate from Tempting Treasures on Water Street in Henderson. Tempting Treasures carries a rainbow of colors. But for this recipe I had a beautiful Sky-blue Milk chocolate.
