This is the perfect dish for intimate dinners and it tastes better in the presence of loving company. Slathered in sauce, it’s a homemade aphrodisiac, and the romantic dinner for two you’ve been looking for to enjoy in the comforts of your home.
COCOA EXPRESSION OF CHOCOLATE LOVE (RIBEYE WITH COCOA SPICE MIX)

INGREDIENTS
- 1 Ribeye
- 1 Sprig Fresh Thyme
- 1 Tbsp Olive Oil
- 1 Tbsp Butter
SPICE MIX INGREDIENTS
- 1 Tbsp Cocoa Powder
- ½ Tbsp Meat Magic
- ½ teaspoon ground thyme
- 1 Tbsp Espresso Ground Coffee (dry)
- 1 teaspoon sea salt
- ½ teaspoon black pepper
INSTRUCTIONS:
- Apply a generous amount of spice mix to a half inch rib eye, coat with olive oil and melted butter.
- In a large sauté pan on medium heat just before it starts to smoke, lay ribeye in pan and allow to achieve a beautiful char for two minutes.
- Turn and enjoy the beauty of your creation. The intertwining colors of the charred fat and meat will be perfect. After two minutes, place ribeye in 400 degree oven for 12 minutes to achieve medium rare (135 degrees).
FOR THE SAUCE
- 1 Tbsp of Cocoa Powder
- ¼ C Demi Glace (Village Meats is where one can get exotic items in Vegas, located on Tropicana and Eastern)
- ¼ C Coffee. (the beverage)
- 1 Tbsp chilled butter
INSTRUCTIONS:
- Except the butter, add ingredients together in a saucepan, and reduce under medium heat to desired thickness (when it coats the back of a spoon). Finish by swirling in butter.
